Ingredients<\/strong>
\nCapsicums x 3 colours
\nBroccoli
\nCarrots
\nWhole continental cucumber
\n1 cup Greek yogurt
\n1 clove garlic
\n1 tbsp garlic
\n10 mint leaves
\nPinch salt<\/p>\n

Directions<\/strong>
\nTo make your Jack-o\u2019-lanterns take a small knife and carefully carve the top off a capsicum. Remove the seeds and pith and carve out a mouth and eyes. Cut up the broccoli, carrot and half of the cucumber into bite size chunks and sticks and fill up your jack-o\u2019-lanterns. For the dip: deseed the cucumber and grate into a bowl along with one large garlic clove. Finely chop the mint leaves and add to the same bowl along with the yogurt, lemon juice and salt.
