Ingredients<\/strong><\/p>\n

4 Medium Over-Ripe Bananas
\n3 Large Eggs
\n1\/3 Cup Olive Oil
\n1\/4 Cup Unrefined Raw Sugar or Brown Sugar
\n1 Teaspoon Vanilla Extract
\n2 Cup Almond Meal
\n1\/2 Cup Rolled Oats
\n1 Teaspoon Baking Powder
\n1 Teaspoon Ground Cinnamon
\nPinch of salt
\n1\/2 Cup Chopped Dark Chocolate (75% or above)<\/p>\n

Directions<\/strong><\/p>\n

Preheat oven to 170C, line a 12 muffin, muffin tin with cupcake liners.<\/p>\n

Mash the banana\u2019s, add eggs, oil, sugar and vanilla and mix well to combine.<\/p>\n

Add almond meal and oats. Sieve over the baking powder and cinnamon, add salt and half of the chopped chocolate, then stir until fully incorporated.<\/p>\n

Divide mixture evenly between paper cases, sprinkle remaining chopped chocolate over the tops of the muffins.<\/p>\n

Bake for 30-35 minutes or until a skewer comes out clean when inserted into the centre.<\/p>\n

Remove from the oven and set aside for 5 minutes before transferring to a wire rack to cool.<\/p>\n
