Veggie Jack-O’-Lanterns With Tzatziki

Capsicums x 3 colours
Whole continental cucumber
1 cup Greek yogurt
1 clove garlic
1 tbsp garlic
10 mint leaves
Pinch salt

To make your Jack-o’-lanterns take a small knife and carefully carve the top off a capsicum. Remove the seeds and pith and carve out a mouth and eyes. Cut up the broccoli, carrot and half of the cucumber into bite size chunks and sticks and fill up your jack-o’-lanterns. For the dip: deseed the cucumber and grate into a bowl along with one large garlic clove. Finely chop the mint leaves and add to the same bowl along with the yogurt, lemon juice and salt. Mix well and serve straight away or prepare ahead and store in the fridge in a sealed container.
