Tropical Quinoa Coconut Bowl

Ingredients:
1/2 cup organic white quinoa
3/4 cup (175ml) water
400ml (1 tin) organic coconut milk
2 tablespoon organic honey
1 Organic Mango Whole Kids Frooshie
Fresh chopped strawberry and banana
Fresh or dried coconut (for older children)

Method:
Place quinoa and water in a medium saucepan and bring to the boil, then simmer over a low heat for 7 minutes, or until water is absorbed. Stir in coconut milk and continue to cook over a low heat for 15 minutes, staring occasionally. Remove from the heat and stir through the honey and allow to cool a little. As the mixture cools it will thicken so can be served warm in bowls or put in jars for later. Finish the pudding with the fresh strawberries, banana, a squirt of Frooshie and a sprinkle of coconut.
